🧑🍳 Preparation

1. Prepare the roulades

Spread the beef roulades out on a board and flatten them slightly if necessary. Season with salt and pepper, then spread thinly with mustard.

2. Fill & roll

Place a slice of bacon, some cucumber strips, and onion rings on each piece of meat. Roll up the roulades tightly from the short side.

3. Secure with roulade pins

To prevent the roulades from opening up during frying, they are now secured with a stainless steel roulade needle .

4. Fry

Heat the clarified butter in a roasting pan. Brown the roulades thoroughly on all sides. Then remove them and set aside briefly.

5. Prepare the sauce

Add the remaining onions, any leftover vegetables, and the tomato paste to the roasting pan and sauté briefly. Deglaze with red wine (optional), then add the broth.

6. Braise the roulades

Place the secured roulades back into the roasting tin, cover and braise over low heat for about 90 minutes , until tender.

7. Serve

Carefully remove the roulade needles – the handle makes this possible without burning or tearing. Serve the roulades with gravy – for example, with potato dumplings or red cabbage.
